A crawfisher runs crawfish traps in a field just east of Eunice on a recent morning. According to the Louisiana State University Ag Center’s ‘2024 Louisiana Summary: Agriculture & Natural Resources,’ there are more than 250 crawfish producers in St. Landry Parish in 2024.
